Tomato Basil Soup

 

I found a recipe for Tomato-Basil soup today over at Skip to My Lou.  I thought I would try it out since it was pretty quick and easy… not to mention I LOVE tomato soup.  It’s isn’t very WW friendly but I will make it work and be sure to eat it with lots of veggies.  I just made it and it is FABULOUS…I swear  I could just sit with the whole pot in my lap and eat it up…yummy…this is a keeper.

La Madeleine Tomato-Basil Soup

Ingredients

4 cups tomatoes, peeled, cored and chopped, or 4 cups canned whole tomatoes, crushed
4 cups tomato juice
12 – 14 washed fresh basil leaves, plus additional for garnish, chopped
1 cup whipping cream
1/2 cup sweet, unsalted butter, softened
Salt to taste
1/4 teaspoon cracked black pepper
Crusty bread (optional)

Directions

Combine tomatoes and juice in saucepan. Simmer for 30 minutes over
medium-low heat. Cool slightly, then place in a blender or food
processor. Add basil and process to puree; this will have to be done in
batches.

Return mixture to saucepan. Add cream and butter. Stir over low heat
until butter and cream are incorporated. Stir in salt and pepper before
serving. Garnish with more fresh basil and serve with fresh, crusty
bread. Makes 8 servings.

An old friend posted this on facebook today and I found it really inspiring.  So true.  It’s so important that we remind ourselves that we can make our life what we want it to be…even though sometimes unexpected things happen in our life, how we react to those things is completely our choice.   With the new year approaching, it’s a great time to remind ourselves of how grateful we should be for the past year and look forward to what the new year will bring us.

I’m not making any resolutions this year….at least I’m not calling them resolutions.  Just going to make a conscious effort to make some changes in my life.  The biggest change I want to make is improve my health.  Coming from a gene pool of cancer and heart disease, I really need to make some changes.  I’ve done Weight Watchers in the past and it’s really been the only thing that has been manageable for me as far as weight loss.  Going to give it another try but not going to set myself up for failure.  I’m telling myself that if I fall off the wagon I will just start over the next day.  Also, making this a permanent change, not just a “diet”.  Can’t say I’m overly confident..In my mind, I know I want to make these changes, but sometimes life overwhelms me and I put everything and everyone else before me.  I’m going to work on that this year as well.  I truly believe that we need to take care of ourselves in order to take care of others, although that’s not what I do.  Need to change that.  Lots to do this year….but going to keep my chin up and move forward…Life is good!
