Hamburger stroganoff

A friend of mine gave me this recipe.  It is both kid friendly and adult friendly.  Especially friendly to the adult that has to cook it becuase it is really simple and has few ingredients.

  • 1lb. ground beef or ground turkey
  • 1lb. pasta of your choice (I usually use corkscrew or bowtie)
  • 1 can cream of chicken soup
  • 1 can milk or heavy whipping cream, which ever you have on hand
  • salt and pepper to taste
  1. Cook pasta according to package and drain.
  2. Brown the ground meat.  Season with salt and pepper to taste.
  3. Add the can of cream of chicken soup and can of milk.  It will look runny but that is ok.
  4. Combine the ground meat sauce with the pasta.

 Super easy and very yummy!

Easy Apricot Cobbler

I dislike baking very much…it’s too much measuring for me, but I had some apricots that were given to me and I didn’t want them to go to waste.  I found a recipe for Apricot Cobbler that looked pretty easy.

Debbie and UB were over and we ate the whole darn thing in one sitting…It was delicious.

Chicken Enchiladas

  • 4-5 chicken breasts cooked and shredded or rotisserie chicken shredded (depends on what kind of meat you like)
  • 1 can cream of chicken
  • 1/2 cup of sourcream
  • 2 cups shredded cheese
  • 1 can of enchilada sauce (red or green whichever you prefer)
  • Tortillas – we use flour but corn would work well too.
  1. Combine shredded chicken, can of cream of chicken, sour cream and 1/2 cup of shredded cheese.
  2. Mix all together so that all the ingredients are equally distributed.
  3. Pour some of the enchilada sauce in the bottom of a 13 x 9 baking dish.  Not too much, just enough to cover the bottom lightly.
  4. With a spoon, scoop chicken filling onto a tortilla and roll up.  Lay in baking dish.
  5. Continue until you have no more filling.  Hard to say how much this will yield.  Depends on how much you fill up your tortillas.
  6. Once backing dish is full, take the rest of the enchilada sauce and pour it over the enchiladas evenly.  You can use more if you like it soggier. 
  7. Sprinkle shredded cheese over the top (as much as you’d like)
  8.  Cover with foil and put in the oven at 350 degrees for 30 minutes*
  9. Let sit for about 15 minutes before eating.

It’s very yummy and tastes great leftover.  If you want to make this freezable, omit the sourcream and don’t put the shredded cheese on top before freezing. Just add it before heating.

*  to prevent the cheese from sticking to the foil, spray the foil lightly with cooking spray.  Now the cheese won’t stick to it once it’s all melted.

Spagetti Recipe

Super Super Super easy

  • 1lb. spagetti
  • 1lb. ground turkey or ground beef)
  • Prego Spagetti Sauce
  • Salt to taste
  • Pepper to taste
  1. Start boiling water in a pot.  Add salt to taste
  2. In a separate pot brown the ground turkey/beef
  3. Add salt and pepper to taste
  4. Once meat has been browned all the way, add Prego spagetti sauce.  My family doesn’t like their spagetti too saucy so I only use 3/4 of the jar. 
  5. Mix well and heat through
  6. Drain cooked spagetti and rinse with cool water
  7. Put spagetti back in original pot and combine with meat sauce.

Ready to serve.  This is usually enough for some leftovers.  It’s oh so yummy and easy

First official day of Summer Vacation

We are finishing out a year round schedule at our Elementary School.  Today is the first official day of Summer vacation.  It’s going to be 102 degrees today…yuck!  My oldest is still sleeping – enjoying the fact that he didn’t have to get up at 7.  Would someone else let the 3 year old and 1 year old know that it’s ok to sleep in as well!  I’m a little anxious about what to fill the days of summer with.  I don’t want the boys to be bored and it really is too hot to be outside unless we are doing water activities.  I have both a reading and writing plan set up for Nathan.  I don’t want him to get summer mushy brain before going to 2nd grade.  My first stop today is going to be the grocery store to pick up items needed for my weekly menu.  Hopefully the rest of the day will go as smoothly as the morning has gone so far.

Ok, so I’m trying to be more organized and plan better.  I’ve read so much about the Menu Planning Monday Phenomenon and I think I’m going to give it a try.  So the point is to post the menu for the week on Monday.  This should help with those nights that you just dont know what to cook.  We will see how it goes.
